![]() Time for a new recipe! My dad always used to make this using a fatty meat and full fat string cheese. I used to love it. Still do! But it's not a waist slimming meal. Today I was determined to change that and it turned out pretty darn good. I sliced 7 Hungarian wax peppers down the middle, cleaned out the seeds, and stuffed them with a stick of light string cheese. While doing so, I browned up a pound of 96% lean ground beef. Once cooked, I added a half can of petite diced tomatoes, a heaping tablespoon of garlic, and a packet of onion soup. After the ingredients were completely mixed, I took a small spoon and stuffed the peppers (sliced once vertically) putting the meat on top of the cheese. It only takes a half pound of beef to fill 7 peppers but I sprinkled the rest around the baking dish to add some extra protein to the plate. Lastly, I baked it in the oven for an hour at 375 degrees. I love heat, but it doesn't have to be spicy. If you don't like the heat, just make sure you remove all of the seeds from the pepper.
