If you think chicken and brown rice is boring, give that classic healthy meal a make over with a zing!
Note: This specific recipe has a bit of a zing and zest to it. If you desire a more mild meal, consider scaling back on some of the spices.
4 small boneless chicken breast cut into small pieces
1 large diced yellow onion
4 cloves of garlic chopped (I like large chunks to taste the garlic in individual bites. Mince or cut smaller if less garlic flavor is desired)
1 inch piece of ginger, peeled and grated
1/2 tsp ground turmeric
1/4 tsp cayenne pepper
2 tsp ground coriander
1/2 tbsp ground cumin
1 tbsp paprika
1/4 tsp salt
1/4 tsp pepper
15 ounces tomato sauce
1 cup of coconut milk
Cilantro (To taste. Sprinkle on plated meal)
Fist sized serving of brown rice
Directions: Wet a paper towel with a little olive oil and coat your crock pot lightly with the oil. Add the chicken, onion, garlic, seasonings, tomato sauce and coconut milk. Stir contents until thoroughly mixed. Cover the crock pot and cook on low for 4-5 hours or on high for 8-9 hours.
